The lemon peels were supposed to be discarded after the juice was squeezed out for other drinks. "Since these are organically grown lemons, let's use the peels too!" This wonderful upcycled drink was created. The key is the tingling sensation of Japanese pepper and the refreshing feeling of fresh mint that can be felt in the aftertaste! We actually served a prototype on mitosaya's Open Day, but in response to customer feedback, we increased the amount of green Japanese pepper. It has just the right amount of bitterness, with a soft aroma of cardamom and fennel. Serve ice cold in a wine glass.
